Anyone with young children (and even older children) will relate to the fact that dinner time can sometimes be difficult. Battling with different tastes without cooking separate meals can sometimes be a challenge.
However, Macaroni Cheese is a firm favourite with all three children in our household.
Here is the recipe I use, if you haven’t given it a try yet.
185g small macaroni
2 rashers bacon
1/3 cup flour
1/4 teaspoon dry mustard
2 1/4 cups milk
30g butter, extra
1/2 cup packaged dry breadcrumbs
250g cheddar cheese
Cook macaroni in large quantity of boiling salted water until tender, approximately 10 minutes; drain. Saute chopped bacon until crisp, remove from pan. Add butter to pan drippings; when melted, stir in flour, mustard, salt and pepper; cook 1 minute.
Remove from heat, gradually add milk; return to heat, stir until sauce boils and thickens. Stir in three-quarters of the grated cheese, add bacon and cooked macaroni. Spoon into well-greased ovenproof dish.
Combine extra melted butter and breadcrumbs, sprinkle over macaroni, top with remaining grated cheese. Bake in moderately hot oven approximately 25 to 20 minutes, until well browned.
